Ingredients


    Cabbage, fresh, 0.50 head, small (about 4-1/2" dia)
    Onions, raw, 1 small (remove)
    Potato, raw, 1 medium (2-1/4" to 3-1/4" dia.) sliced
    Quick Brown Rice, medium grain, 1 cup (remove)
    Turkey, Ground turkey, 93% lean, 16 oz cooked
    Campbell's Low Sodium V8 Vegetable Juice, 4 oz (remove)
    hunt's petite diced tomatos, 2 cans with juice
    Mrs. Dash seasonings

Directions

Layer sliced potato, brown rice, cooked turkey, onions, cut/sliced cabbage in a casserole dish (did not fit in 8x5 in pan) pour tomatos w/ juice over the top and add v8 (maybe less than 4 0z) for extra liquid. Cover w/ foil tightly. Cook at 350 for 45 min- 1 hour, until rice and potatoes are cooked. Recipe is calculated at 6 servings, but I think this is atleast 8 servings. Also good with a little reduced fat cheddar cheese sprinkled over the top.
