Ingredients

    3 3/4 c Wheat Bran
    1 1/2 c Old Fashion Oats
    3/4 c whole wheat flour
    3/4 c all purpose flour
    6 t baking powder
    3/4 t baking soda
    2 1/4 c + 3 T unsweetened applesauce
    1 1/2 c nonfat milk
    2/3 c honey
    5 drops of stevia
    3 egg whites
    1 egg yolk
    1 1/2 c freshly chopped apple
    1 t cinnamon
    3/4 t salt
    1/8 t allspice
    1/4 t ginger
    1 t vanilla extract
    1/4 t orange zest
    1/4 t lemon zest
    1/8 t nutmeg
    3 T ground flaxmeal

Directions

Mix dry ingredients in a large mixing bowl.
Mix wet ingredients in another bowl.
Add wet to dry and mix until moistened. Then, fold in chopped apples.
Spray 3 muffin pans with Pam. Scoop a large spoonful of dough into each place in the pan, filling up to 2/3 of the form.
Preheat oven to 400 degrees. Bake for 20 minutes.
