    3 cups cooked white long grain white rice
    1/2 cup frozen peas
    2 cups Fresh Express cabbage cole slaw mix
    1/2 cup thinly sliced white mushrooms
    1/2 cup diced red bell pepper
    1/4 cup chopped scallion
    4 oz boneless pork loin chop sliced thinly into bite sized pieces
    2 eggs, beaten
    2 tsp sesame oil
    3 tsp olive oil
    3 Tbsp low sodium soy sauce
    2 Tbsp low sodium teriyaki sauce


heat sesame oil and olive oil in a large frying pan or wok. Add pork, scallion, red pepper and mushrooms. Stir fry for 2 - 3 minutes. Add cole slaw mix and peas and stir fry for another 2 - 3 minutes. Add cooked rice and stir until heated through. flatten rice and push to edges of pan, creating a hole in the center. Add beated eggs and scramble until cooked through. Mix with rice. Add soy sauce and teriyaki sauce to pan and stir to mix well until heated through. Makes 4 main dish servings.
