Ingredients

    Onion .25 cup chopped
    Potato, raw, 1.5 cup diced
    Mushrooms, fresh, .5 cup, pieces or slices
    Green Peppers (bell peppers), .75 cup, chopped
    Asparagus, fresh, .25 cup
    Egg Creations 2 cups
    Anco Light Swiss Cheese, aprox 6 slices or 122 g

Directions

spary glass casserole or pie plate with pam.. Place veggies and potaoes in a fry pan with a little bit of water to soften. Once softened place vegg mix into prepared dish and pour egg creations over top. Lay cheese slices over top and place in a 400F oven for aprox 20 minutes. Use toothpick in center to test doneness.
