Very healthy, low cal, dairy free soup. Simple to make and very filling. Very healthy, low cal, dairy free soup. Simple to make and very filling.
Number of Servings: 7


    Tomatoes, canned, good quality (i.e. Italian plum), 28 fl. oz.
    Onion, Sweet, Large, chopped
    Chicken Broth, 3 cups
    Sugar, 1 tsp.
    Oliver Oil, .5 tbsp.
    Oregano, .5 tsp.
    Basil, fresh, 5-6 leaves
    Tarragon .5 tsp.
    Pepper, fresh ground
    Salt to taste


Combine all ingredients in a saucepan. Bring to a boil then simmer for 30 min. or until onions are very soft. Puree in blender in 2 batches. Top with fresh ground pepper. Makes 7 1-cup servings at 41 cal. per serving.
