    Cauliflower-1 head
    diced tomato-1 can
    tomato sauce-1 can
    red beans-3 cups
    carrots-5 stalks
    ground turkey- already cooked-2 cups
    mozzerella cheese-4oz (1/2 a bag)


In a glass casserole dish, combine the leftover veggies from your fridge with some left over meat (I had ground turkey).

Add tomato sauce and diced tomatoes and cover with mozzarella.

cover w/ Al Foil and place in preheated 350-degree oven for 45-min or until veggies are crunchy to taste.

Calories are calculated based on my ingredients make 8 servings. Each serving would be 1/8 of my casserole dish (which should be 1-2 cups each)
