    2 lbs baking potatoes (approximately 4 potatoes)
    3/4 cup lt sour cream
    1 cup shredded low-fat cheddar
    3 slices of bacon, chopped


Preheat oven to 350 degrees F.

Scrub potatoes and pierce with a fork or sharp knife in several spots. Place on baking sheet and bake in oven for 1 hour.

Remove potatoes from oven, slice in half, and scoop out the insides leaving 1/4" potato on the skin. Place potato insides in bowl, mash and mix with sour cream, 1/2 cup of shredded cheddar, and chopped bacon.

Scoop the filling into the potato skins and return to oven for 20 minutes. Top with remaining cheese and bake for additional 5 minutes.

Makes 8 servings.
