Number of Servings: 4


    Ground turkey (1 lb)
    bacon (4 slices)
    onion (medium, chopped)
    celery (2 stalks, chopped)
    carrots (1/4 c chopped)
    sour cream (1/2 c)
    instant mashed potatoes (made w/ nonfat milk, butter)
    peas, frozen (2 cups)
    chicken broth (1 cup)
    flour (2 tbsp)
    Salt & Pepper


In a dutch oven brown bacon, turkey, add onions, celery, carrot until veggies are soft. Add flour, mixing in to cook then add chicken broth, allow to cook and thicken. Add frozen peas at the last minute on the stovetop, then 1/2 the sour cream. Meanwhile prep instant mashed potatoes (or use leftover fresh) and blend in remainder of sour cream. Smooth potatoes over top of turkey/veggie mix, then rake top w/ a fork to create texture. Broil until potatoes brown slightly. (Top with chopped scallions or chives).
Makes 4-5 big servings.
