    3/4 C. Dried Cherries
    3/4 C. Dried Diced Apricots
    3/4 C. Golden raisins
    4 1/2 C. Flour - unbleached
    2 Tbl Baking Powder
    1 tsp salt
    4 tbl sugar (divided)
    2 tbl Canola Oil
    1 cup low fat plain yogurt
    2 tbl orange zest
    2 eggs
    1 egg white


-preheat oven to 400, coat baking sheet with pam.
-In small bowl combine dried fruit and cover with warm water and let sit for 5 mins or until slightly plump then drain off water and set aside.
-In a large bowl combine, flour,baking powder, salt and 3 tablespoons of sugar. Add oil mix evenly with fork or pastry cutter, Stir in yogurt, orange zest, and 2 eggs. Then add dried fruit until mixture comes together. Knead a few times in bowl or floured surface. (do not over Knead)
-Divide dough into 2 balls. Flatten each down to 3/4 inch thick and cut each ball in 8 wedges.Brush with egg white and remaining 1tbl sugar. Bake for 20-22 mins until golden brown.
