A delicious mix of veggies and eggs with feta cheese! A delicious mix of veggies and eggs with feta cheese!
Number of Servings: 4


    1/2 of a large onion, chopped
    14.5 oz can of petit diced tomatoes
    4 oz feta cheese crumbles
    6 eggs, beaten


heat pan over medium heat and add 1 tsp olive oil
add onions to pan and cook until lightly browned
add tomatoes, cook for 3 more minutes
add eggs and feta cheese, cook until eggs are done

Makes 4 1-cup servings
