Introduction

So delicious! Servings are very large - I usually only eat 1/2 of a serving. So delicious! Servings are very large - I usually only eat 1/2 of a serving.
Number of Servings: 4

Ingredients

    2 cans tuna packed in water, drained
    4 Tbsp. Kraft Light Miracle Whip
    1 medium gala apple
    1 medium carrot
    1/2 cup broccoli florets
    4 9-grain ciabatta buns (from Costco)
    4 leaves romaine lettuce
    4 1oz slices medium cheddar cheese
    16 slices of cucumber with peel
    salt and pepper to taste

Directions

Drain tuna and place in medium size bowl. Mix in Miracle Whip. Shred the apple and carrot and mix into tuna. Chop the broccoli florets into small pieces and mix into tuna. Add salt and pepper if desired. Open each bun and place 1 slice of cheese, 4 slices of cucumber and 1 leaf of romaine lettuce on each. Spread 1/4 of the tuna mixture onto each bun.

Makes 4 very generous servings.

Serve with raw fruit and veggies if desired.
