Introduction

I really like hominy, and this is one of my favorite "brunch" dishes when I have friends over. It is very filling, and staves off the hunger pangs for hours.

I am presenting the pumped-up (fatty) version of the recipe so that people can see what variations I like, but usually I don't include all the fatty ingredients - I'll do the cheese but not the sour cream, or put in two slices of bacon, chopped up, in place of the oil, cheese, sour cream, and chipotles. I'm sure there are many other variations.

Ingredients

    hominy, 1 can
    4 eggs
    1/4 cup milk
    2 Tbs oil
    4 scallions, chopped
    1 chipotle pepper, chopped
    1 dash salt
    1 slice good cheddar cheese.

Directions

Fry hominy until broken up and warmed through. Add milk, cook until the milk is taken up by the hominy. Add 1 chipotle pepper, chopped fine. Add scrambled eggs and cook on low temperature until done through. Add cheese slice, broken up into small pieces, and scallions. Add Makes four 1.5-cup servings. Serve with 1 Tbsp. low-fat sour cream.
