A healthy version of Matzo Brei good for Passover week. A healthy version of Matzo Brei good for Passover week.
Number of Servings: 1


    2 Egg whites scrambled
    1 Half of Matzo (Kosher for passover)
    1 cups Spinich
    1/3 cup Mozzarella Cheese (Check labels to see if it is kosher)
    .25 cup Tomatoes chopped
    cooking spray
    salt and pepper to taste


prepare veggies spinich and tomatoes. Heat pan and spray with cooking spray. Scrable eggs and set aside. Take matzo cracker break it and soak it in water for about a full minute to soften. Crumble it in the egg mixture then add half cup of spinich. Pour into the pan and fry till cooked completely. Place on top of fresh spinich and add tomatoes and sprinkle top with cheese. (Don't have to use all the chese it is a sprinkle)

NOTE: Other good things to add, would be onions ad bell peppers. I didn't calculate those within this recipe.
