A lighter take on a pasta dish with a tomato cream sauce. A lighter take on a pasta dish with a tomato cream sauce.
Number of Servings: 6


    1 box whole wheat rotini or penne pasta
    1 lb boneless skinless chicken breast
    1 tbsp olive oil
    1 small onion, diced
    4 garlic cloves, chopped
    1/2 cup white wine
    2 cans tomato sauce
    1 cup hood simply smart fat free milk (substitute for 1 cup heavy cream)
    1/4 cup chopped parsley
    6 basil leaves, chopped
    salt, pepper, and garlic powder to taste


Bring a large pot of water to a boil and cook the pasta to desired doneness.
In a skillet over medium heat, add 1 tbsp olive oil and cook chicken until no longer pink (about 5 minutes; personally I cook my boneless skinless breasts on the George Foreman and cut into bite size pieces)
Remove chicken from pan and add some seasoning to taste (most prefer salt and pepper, but I put some blackened seasoning on mine).
Add onion and garlic and saute for about 5 minutes.
Add white wine and allow to begin to evaporate.
Add tomato sauce and reduce heat to low.
Add milk, parsley and basil.
Add chicken back to the pan and simmer for about 5 minutes or until sauce begins to slightly thicken.
Toss over pasta and garnish with fresh basil.
Makes about 6 servings.
