Number of Servings: 18


    2 cups whole wheat flour
    1/2 cup sugar
    3 tsp baking powder
    1/2 tsp salt
    1/4 cup unsweetened applesauce
    1/4 cup egg substitute (or 1 egg)
    1 cup fat free milk
    1/2 cup semi-sweet chocolate chips
    1/4 cup chopped walnuts


Preheat oven to 400 degrees. Mix together with blending fork or pastry blender. Then stir just until ingredients are blended. Blend in carefully 1/2 cup chocolate chips and 1/4 cup chopped walnuts.

Fill muffin cups (coated with non-stick cooking spray) 2/3 full. Bake until golden brown, about 20 to 25 minutes.

Makes 18 medium-sized muffins.
