Introduction

Ingredients

    Bay scallops, whole wheat rotini, diced tomatoes, olive oil, white wine, garlic, portabella mushrooms, reduced fat feta cheese, parmesan cheese, basil, oregano, salt, pepper

Directions

Heat 1 tbsp of oil in the pan, once pan is well heated add portabella mushrooms and garlic. Cook mushrooms for approx. 3-5 minutes or until partially cooked. Add thawed bay scallops and 1 fl oz of white wine. Also add a 1 tsp of basil, 1 tsp oregano and a dash of salt and pepper. Turn the heat up so the wine and scallops simmer. Cook for approx. 5 minutes. Add 1 cup of diced tomatoes and continue to simmer until scallops are thoroughly cooked.

Cook pasta based on box instructions, 2 oz per serving so for two people it would be 4 oz. Approx cook time for rotini is 10-12 minutes.

Plate both pasta and scallops and garnish with some reduced fat feta crumbles and parmesan cheese.
