    2 C flour
    2 teas. baking soda
    1 teas. baking powder
    1 teas. salt
    2 teas. cinnamon
    1 3/4 C sugar
    1/2 C canola oil
    1/2 C apple sauce
    3 eggs
    1 teas. vanilla
    2 C shredded carrot
    1/2 C chopped pecan
    3/4 C well drained crushed pineapple
    1/2 C raisins

    8 ounces light cream cheese
    1/4 C butter
    2 C confectioners sugar


Makes 32 cupcakes with frosting (195 calories each)

Pre-heat oven to 350.

Stir together dry ingredients, add wet ingredients and mix well.

Drop a rounded 2 tblsp of batter into muffin pan lined with paper liners.

Bake 20 minutes or until set in center.

Cool completely.

Frost with cream cheese frosting, if desired.
