Introduction

My mom always makes these for Passover - they puff up from the egg like a pâte à choux. Up to you whether or you consider it kosher, but I certainly do! Number of Servings: 8

Ingredients

    1/2 c oil
    1 Tb sugar
    1 tsp salt
    1 cup boiling water
    2 c matzo meal
    4 eggs

Directions

Bring oil, sugar, salt and water to a boil; remove from heat. Stir in the matzo meal all at once, return to heat, beating continuously till it forms a compact ball and leaves the sides of the pan. Using hand mixer, beat in the eggs, one at a time, till the batter is smooth thick and shiny.
Shape the batter into 8-10 balls and place on greased cookie sheet about 2 inches apart. Cut across top in a roll design. Bake, 375 x 1 hour till golden brown. Cool on paper towels on a rack.

Nutrition facts are for 8 rolls - if you can get 10 out of it they will be less caloric.
