    * Egg, fresh, 2 large
    * Granulated Sugar, 2/3 cup
    * Banana,very ripe, 2 medium
    * Applesauce 1/4 cup
    * Milk, 1%1/3 cup
    * *Extra Virgin Olive Oil, 1 tbsp
    * Vanilla extract 3/4 T
    * *Flour, white, 13/4 cup
    * Baking Powder, 2 tsp
    * Baking Soda, .5 tsp
    * Salt, .5 tsp


Preheat oven to 325 degrees. Spray pan with spray oil and lightly dust with flour.

In a bowl, sift flour, baking powder, baking soda, and salt together.

In another bowl (or food processor) beat eggs and sugar until light and fluffy. Then beat in bananas, applesauce, milk, oil and vanilla. When that is mixed add dry ingredients and mix well.

Pour batter into bread pan or 12 muffin pan. Not filling more than about 2/3 full. Bake about 1 hour for bread and about 40 minutes for muffins.

Yield 1 loaf or 12 muffins.
