    * *Ancient Harvest Traditional Whole Grain Quinoa, 1 serving =.25 cup dry, 2 cup (remove)
    * Goya Chickpeas, 3.5 cup (remove)
    * *Earth Balance, 1 tbsp (remove)
    * *Extra Virgin Olive Oil, 3 tbsp (remove)
    * Carrots, raw, 1 cup, chopped (remove)
    * Onions, raw, 1 medium (2-1/2" dia) (remove)
    * Garlic, 8 cloves (remove)
    * Vegetable Broth - Pacific Low Sodium, 4 cup (remove)
    * *Raisins, golden seedless, .25 cup, packed (remove)
    * Cilantro, raw, 8 tbsp (remove)
    * *Cumin seed, 1 tsp (remove)
    * Chili powder, 1 tsp (remove)
    * Chili powder, 1 tsp (remove)
    * *Coriander seed, .5 tsp (remove)
    * Nutmeg, ground, .5 tsp (remove)
    * Cinnamon, ground, 1 tsp (remove)
    * Almonds, .125 cup, ground (remove)
    Bay Leaves 1 large or 2 small


Heat butter and oil
Add: onion, garlic & carrots, when soft
Add: cumin through cinnamon and mix
Add: Quinoa and cook for a few minutes, mix to coat with oil and spices.
Add: chickpeas, raisins and mix
Add broth and bay leaves
Bring to a boil then simmer for 20 min or until liquid is absorbed
Chop cilantro and almonds and garnish when ready to serve.

  • i made this last night, minus the almonds and cilantro because i didn't have either one on hand. i did add quite a bit of salt and pepper. i really enjoyed it. next time i might throw in some chopped dried apricot and some cut green beans. i think they'd both taste good in there. yay for vegan food! - 10/14/10
