Introduction

This is a salad that my mother use to make and I always loved it. It's refreshing. Looks really pretty if you put a serving on top of shredded iceberg lettuce. O.K.
This helped me remember a similar recipe my family used when I was a kid. We did not add the pineapple or cottage cheese until the jello began to get syrupy or jell. This way, you have more bright spots of jello in the final mix. - 8/26/20

    Incredible!
Of all the jello-cottage-cheese recipes on Spark, this is the one closest to "mine" (handed down from my Mom). Measure the drained pineapple juice and add enough water to make the 2 cups of liquid needed. Fold in 8 oz of cool whip lite for a creamier texture and added sweetness. Truly delicious! - 5/26/10

Well it was also my mother's recipe and she made it before we had cool whip. Sounds good, I'll try it.
