    Cooking spray
    10 oz boneless, skinless chicken breast, cubed
    1/4 cup onion, diced
    1 cup mushrooms, thinly sliced
    1/2 cup carrots, diced
    1/2 cup frozen peas, thawed
    2 tbsp whole wheat flour
    1/2 cup low sodium chicken broth
    1/2 cup skim milk
    Salt and pepper to taste
    4 whole wheat tortillas (small size, about 8 inch diameter)
    Parsley, for garnish, if desired


Spray a large nonstick frypan with cooking spray and heat over high heat. Reduce heat to med-high and saute chicken until browned, about 5-7 minutes or until cooked through and no longer pink. Remove chicken from pan.

Add onions and carrots to same pan and saute until softened, about 10 minutes. Add a little water to pan if needed while cooking veggies. Add mushrooms and cook another 5 minutes until softened. Add peas and saute another 3 minutes.

Add chicken back to pan and stir in flour. Add broth and milk, 1/4 cup at a time (starting with broth) stirring constantly until sauce is thickened, about 4 minutes. Season with salt and pepper.

To serve: pour 1/4 of chicken mixture onto each tortilla. Sprinkle with parsley, if desired. Roll up.
