    2 cups self-rising flour
    3 TBS brown sugar
    1/2 stick butter
    1/2 cup whole milk
    a little extra flour for rolling the dough


Sift flour and sugar together in a bowl. Cut in the butter. Add just enough milk to moisten the dough. Kneed gently a few times just until the dough holds together. Turn out on a floured surface and roll until about 1/2 inch thick. Cut into rounds with a cookie cutter or glass. Place on a baking sheet and brush tops with remaining milk. Bake at 450 F for 8-10 minutes or just until light golden in color.

These are traditionally served with clotted cream or preserves at High Tea, but they are equally as good as a breakfast biscuit. Can also add some dried fruit (raisins, currents, cranberries, etc.) or chopped nuts to the dough.
