    1 eggplant, peeled and sliced into 1/3 of an inch rounds.
    3-4 heads of garlic, with the top 1/3 sliced off
    4 tblsp. butter
    2 oz flour
    2 oz of diced tomatoes
    4 tsp. of olive oil


Heat oven to 350

Prepare 2 foil lined sheets, sprayed with cooking spray. On the first sheet, place your garlic heads. On the other place the eggplant slices.

Rub one tsp. of oil into the top of each head of garlic, and sprinkle with a bit of salt and pepper. Turn the heads cut side down and place into the oven for 40 minutes to 1 hour.

Remove to cool.

Brush each slice of eggplant with olive oil and sprinkle salt. Bake for 8 minutes, then flip, then bake for another 8 minutes.

Remove to cool

In a small saucepan, melt butter, then whisk in flour to create a roux. Squeeze in the roasted garlic from each head and use fork to combine, then spread on pizza dough and top with garlic slices and diced tomatoes. Drizzle on balsamic vinegar, top with cheese if desired, and bake for 20 minutes.
