    2 Tbsp Olive Oil (divided)
    1 large onion, sliced thinly
    1/2 tsp salt
    1/2 tsp black pepper
    1 lb cod fillets
    2 oz (4 thin slices) prosciutto
    1 lb asparagus
    1 Tbsp Dijon mustard
    1 Tbsp chopped fresh Thyme leaves
    1 plum tomato, chopped
    lemon wedges for garnish


Heat 1 Tbsp olive oil in a skillet over medium heat. Add the onion slices and season with 1/2 tsp salt and 1/2 tsp pepper. Cook for 15 - 20 minutes stirring occasionally, until golden brown.
Divide cod into 4 equal prtions and pat dry. Wrap each fillet in a slice of prosciutto. Heat the remaining 1 Tbsp olive oil in a large skillet over medium high heat. Add the fish and cook 3 - 4 minutes per side until ham is crisp and fish is firm.
While fish cooks pour 1" water in a medium sauce pan and bring to a boil. Add the asparagus. Cover and cook for 3 minutes, until just tender, and drain. Stir the mustard and time into the caramelized onions. Add the cooked asparagus and toss to coat. Arrange cod and asparagus on 4 dinner plates. Sprinkle each with chopped tomato and serve with lemon wedges. 4 servings.
