Number of Servings: 6


    1.5 pounds of sole fillets
    1.5 cups of boiling water
    1/3 cup of finely chopped onion
    2 tbsp lemon juice
    3/4 tsp salt

    Sauce :
    1 cup orange juice
    1/4 cup water
    2 tbsp cornstarch
    2 tbsp liquid honey
    1 tsp dijon mustard
    1 cup frech orange sections
    1 cup seedless green grapes, halved
    Mint leaves (optional)


1- Roll fish fillets and secure with toothpicks
2 - Arrange in shallow skillet.
3- Add boiling water, onion, lemon juice and salt
4- Poach, covered, over low heat for about 8 minutes

1- Meanwhile, in a small saucepan, combine orange juice, water, cornstarch, honey and mustard.
2 - Cook over low heat, stirring constantly.
3- Add orange sections and green grapes.

Spoon sauce over dained fish fillets and garnish with mint leaves.

Tips :
Replace the sole fillets with halibut, haddock or turbot.
Add the grapes just before serving, otherwise the color will disappear and you won't notice them in the sauce.
