Number of Servings: 8


    * Sweet potato, 5 sweetpotato, 5" long
    * Onions, raw, 4 small
    * Carrots, raw, 2 large (7-1/4" to 8-1/2" long)
    * Garlic, 4 clove
    * *Vegetable Stock - no salt, 3 cup
    * Orange juice, fresh, 1.25 cup
    * Tahena's Vegan Oat Milk Yogurt, 1 cup
    * Parsley, dried, 3 tbsp
    * Coconut Oil, 1 tbsp


Dice sweet potatoes, carrots, onions, & Garlic, sautee for 5 min in a bit of oil ( I like coconut personally). Add veggie stock and orange juice, to cover, add parsley. Cover pot, cook on medium heat for 20 - 30 min until tender.
Put through blender or food processor.
Put back in pan, add vegan yogurt, and season to taste.
