Ingredients

    Ingredients
    1 package PERDUE® FIT & EASY® Boneless, Skinless Chicken Breasts
    2 tablespoons butter, divided
    1 package mushrooms, sliced (10 ounces)
    2 medium shallots, sliced
    Salt and ground pepper to taste
    1 tablespoon all-purpose flour
    3/4 cup chicken broth
    1/4 cup heavy or light cream
    2 cups cooked fettuccine



    Instructions
    1.In large nonstick skillet, melt 1 tablespoon butter over medium-high heat and cook chicken 6-8 minutes on each side or until meat thermometer inserted in center registers 170° F. Remove to serving plate and keep warm.
    2.Melt remaining 1 tablespoon butter over medium-high heat and cook mushrooms and shallots with salt and pepper, stirring occasionally, 5 minutes until tender.
    3.Sprinkle in flour and cook, stirring constantly, 1 minute. Stir in broth. Bring to a boil and continue boiling, stirring frequently, 1 minute or until slightly thickened. Stir in cream; heat through.
    4.Pour mushroom sauce over chicken and serve over fettuccine.
