Introduction

Light version of a delicious breakfast casserole....kind of like breakfast lasagna! Light version of a delicious breakfast casserole....kind of like breakfast lasagna!

Ingredients

    Weight Watchers bread, egg substitute, turkey sausage, fat free cheddar cheese (though the web site shows Kraft fat-free singles, I used a shredded fat free cheddar with essentially the same nutritional content), fat free mozzarella, corn flakes, light butter, onion powder and dry mustard.

Directions

Remove sausage from casings, crumble and brown, drain. Coat 9x13x2 casserole dish with cooking spray. Cut crusts from bread and cut bread slices in half. Lay one layer of bread in bottom of dish. Spread half of each cheese and half of sausage over bread. Add another layer of bread, another layer of meat, and another layer of cheese. Blend milk, egg substitute, onion powder and dry mustard in a large bowl; pour over bread layers in pan. Cover and refrigerate overnight. Remove from refrigerator in morning; let sit at room temperature for 30 minutes. Melt butter, toss corn flakes in melted butter to coat, then spread over casserole. Cover with aluminum foil and bake in 325 degree oven for 45 minutes. Remove foil and bake five additional minutes for crunchier topping. Remove from oven and let stand for 15 minutes before serving. I have listed this as twelve servings, but of course, portion sizes are relative. I served this to six people at an Easter brunch and had about half left at the end, so I'm calling it twelve!
