This is Day 1 Dinner

Number of Servings: 2


    1 tablespoon Extra Virgin Olive Oil
    1/2 Greek Bell Pepper, thinly sliced
    1/2 Onion, sliced
    2 5-6 Ounce skinless, boneless chicken breast halves cut
    into 1.5 inch pieces
    Dash of Sea Salt
    Dash of Pepper
    1 cup Dried Black Beans
    1/2 cup chopped White Onion
    2 tablespoons Extra Virgin Olive Oil
    1 teaspoon Sea Salt
    9 cups of Water


1.) Heat a nonstick skillet over medium heat. Add the oil, bell pepper, and onion and cook until onion is clear, about 5 minutes.
2.) Add the chicken and stir for another 5 minutes, or until the chicken is cooked through.
3.)Remove the pan from the heat and season with salt and pepper to taste. Serve with the black beans.

Black Beans:
1.)Combine the beans, onion, oil, and 9 cups water in a 3-quart saucepan. Bring to a boil, reduce the heat, and simmer, partially covered, for 1.25 or until the beans are tender.
2.)Add the salt and simmer, uncovered, until enough water has evaporated so that liquid reaches just below the level of the beans, about 30 minutes.
3.)Serve hot.
