    1 tbsp olive oil
    1 chopped Carrots
    1/2 red pepper chopped
    1 minced Jalapeno Peppers (seeds and ribs removed)
    4 green onions cut in 1 inch peices
    1 clove garlic minced
    2 zuchinni chopped
    1 tsp salt
    1/2 can Tomato Paste
    1 tsp Sriracha sauce
    1/2 cup reduced sodium stock
    1/2 cup white wine
    1/2 cup frozen corn
    1 lb Shrimp


1. Heat oil and saute garlic, red pepper, green onion, carrots and jalapeno. about 2 min. Add in zuchinni
2. Add salt tomato paste and hot sauce
3. Add stock and wine
4. Add in shrimp and frozen corn. Cook till shrimp is opaque.

Serve over rice. 4 Servings
