Ingredients

1 onion, 3 celery stalks, 2 garlic cloves
2 rashers lean bacon
200g new potatoes (skin on)
2 carrots
2 eggs
dried parsley
250g extra lean minced beef
115 ml stock made with Oxo
salt and pepper
113g low fat natural yogurt
Directions

1. Preheat oven to 200oc/400of/Gas 6
Chop onion & celery; crush the garlic; remove all fat from bacon and chop; dice potatoes and carrots; beat eggs
2. Fry the onion, celery, garlic, bacon and beef for 5 mins. Add the potatoes, carrots and stock. Season and cook until the ingredients are tender and the liquid is absorbed.
3. Transfer to an individual baking dish. Stir the parsley and yoghurt into the eggs and pour over. Bake for 35 mins or until set and golden.
