    chicken breast (skinless and boneless), cut into 1inch peices

    1 bag frozen broccoli florets

    2 large or 3 medium baking potatoes, peeled,cooked for 5 min in microwave, then cut into bite size peices

    1 can of cream of mushrrom soup (or any cream of soup that you prefer)

    3 tablespoons mayo

    lemon juice of half a lemon

    1 cup reduced fat cheddar cheese

    1 cup French's fried onions/seasoned bread crumbs


Preheat oven to 375 degrees.

In a large baking dish combine cream of mushroom soup, lemon juice, and mayo.

Add frozen broccoli, chicken and potatoe to soup mixture and combine until soup mixture has coated other ingredients and everything is smoothed into an even layer in pan. Bake for 20 min.

Add cheese in an even layer on top of casserole. Bake for an additional 5 min. or until cheese is bubbly and starting to brown slightly.

Add fried onions/breadcrumbs to top and bake an additional 5 min.

Serve over egg noodles...Enjoy!
