    1 1/2 c. all-purpose flour
    1 tsp. cinnamon
    1/2 tsp. baking soda
    1/2 tsp. ground nutmeg
    1/2 tsp. salt
    1/4 tsp. baking powder
    1 c. grated zucchini
    1 c. sugar
    1 egg
    1/4 c. oil
    1/4 tsp. lemon juice or zest
    1/2 c. chopped pecans


In a medium bowl, stir flour, cinnamon, baking soda, nutmeg, salt, and baking powder together. Mix well. Peel your zucchini and grate enough to make one cup (usually just one medium zucchini). In a larger bowl, beat together the grated zucchini, egg, and sugar with a whisk. Add the oil and the lemon juice and whisk again. Add the flour mixture to the zucchini mixture and mix together. Stir in the chopped nuts (nuts may be omitted, or other things added -- such as coconut, raisins, etc). Bake at 350 in a sprayed loaf pan for about 55 minutes, or until a toothpick comes out clean. After cooling slightly, remove from pan and allow to fully cool on wire rack. Wrap in plastic wrap and allow to rest overnight before serving. Makes 12 slices, approximately 1" each. Enjoy!
