Introduction
I rarely use the microwave for anything more than melting butter, but this recipe is too good and I haven't tried to convert it to oven baking. It's fast, which is perfect on a busy morning with a big family. Ingredients

1/2 c. butter
1/2 c. white sugar
2 eggs
4 c. oatmeal (rolled oats)
1 tsp. baking powder
1/4 c. brown sugar (not packed!)
1 tsp. cinnamon
1 tsp. vanilla
1 c. milk
1 chopped apple (we prefer fuji or granny smith)
Directions
In a large pyrex type casserole dish, place the butter and melt in microwave (about 1 minute on high should do it).
Whisk in the white sugar, and eggs. Add oatmeal, baking powder, brown sugar, cinnamon and vanilla. Stir gently.
Add milk and chopped apples and stir until well blended.
Microwave on high for 10 minutes or until set. Let cool slightly before trying to remove from microwave. It will be very hot.
You can serve with milk on top as well.
Makes 12 - 1/2 cup servings.
