This is a very simple dinner, yet full of flavor and healthy too. This is a very simple dinner, yet full of flavor and healthy too.
Number of Servings: 4


    * 4 skinless, boneless chicken breasts
    * 1 cup uncooked rice
    * 1 14.5-oz can green beans
    * 1 6.5-oz can mushrooms
    * 2 Tbsp butter, divided
    * 2 cloves garlic
    * 1 medium carrot, grated
    * 2 Tbsp lemon juice
    * 1/2 tsp grated lemon zest, optional
    * Salt and pepper to taste


Cook your rice according to package directions. When cooked, add 1 Tbsp butter and mix well. (Butter is optional, the rice I used is sticky rice and needed something to prevent it becoming a massive lump.)

While the rice is cooking, place the beans and mushrooms into a pan and put over low heat to warm through.

Cut your chicken breasts into 1-inch strips. Melt the remaining 1 Tbsp butter in a skillet, add the garlic and saute until fragrant. Add chicken, salt, and pepper to the skillet and cook until no longer pink. Add lemon juice, grated lemon zest, and carrots to pan, cook for an additional 2 minutes.

Combine rice, bean/mushroom mixture, and chicken mixture in a large bowl. Serve with a green salad. Enjoy!
