French soup using wild greens. You can use chard if you prefer. French soup using wild greens. You can use chard if you prefer.
Number of Servings: 4


    Olive oil, leeks (or onion) garlic, 6 c chopped greens (chard, watercress, dandelion, beet greens, whatever you have), 2 eggs, water, salt & pepper. Croutons and Parmesan cheese optional (but I like them!)


Heat 1 T oil, then add leeks (onion) garlic then greens in that order, sauteeing a few minutes after each addition. Add water and salt, bring to a simmer and cook for 15-20 minutes. Adjust seasoning and remove from heat. Beat eggs in a bowl, then add a ladleful of hot (not boiling) broth and temper the eggs. Add the tempered eggs back into the soup and whisk. Ladle into bowls and add croutons and cheese. Yum - and cheap!
