Introduction

Ingredients

    2 Boneless Skinless Chicken Breast-Trimmed of all fat
    2 Small Yellow Squash halved then sliced
    1 Medium Zucchini halved then sliced
    1/2 small Onion sliced thin
    2 Chipotle peppers in adobo sauce (canned)

Directions

Dice Zucchini and Yellow Squash, Slice the onions and chipotle peppers, using non stick pan brown them with a spray of PAM, add chicken then brown, add the can of tomatoes
simmer till the juice is mostly evaporated
