    1.5 lb chicken cutlets
    1/4 t. sea salt
    1/4 t. black pepper
    4 T lemon juice, divided
    2 t. olive oil
    1 c. fresh mushrooms, sliced
    2 T. parsley, chopped
    2 t. capers, drained


Season chicken with salt and pepper and drizzle with 2 tablespoons lemon juice.

Heat oil in large non-stick skillet over medium-high heat. Add chicken and mushrooms and cook chicken for 3 1/2 minutes per side or until golden brown and until mushrooms are soft. Add remaining 2 tablespoons lemon juice, parsley and capers and cook for 2 minutes more.
