    1/2 small yellow onion, diced
    1 clove garlic, minced
    4 T. chili powder
    4 small carrots, sliced
    1 can (28oz) diced tomatoes
    1 can (12oz), drained
    1 cup cooked red kidney beans
    1/4 cup nutritional yeast


Brown onion and garlic in a non-stick pan with 1 T. water until very tender, about 10 minutes. Add chili powder and cook for 1 minute. Add carrots and 1 cup water. Cook for 10 minutes or until carrots are tender.

Add remaining ingredients and heat through. Add salt and additional chili powder if desired.

Makes 4, 1 1/2 cup servings, plus 1/2 cup
