These are wonderful with fish! These are wonderful with fish!
Number of Servings: 4


    1 large yam, peeled and grated
    1 small onion, peeled and grated
    1 egg, beaten
    1/4 cup whole wheat flour
    1/4 tsp baking powder
    1/4 tsp kosher salt
    1/4 tsp black pepper
    1/4 tsp red pepper flakes or cayenne pepper
    1 tsp smokey paprika

    For Serving:
    1 tbsp chopped chives
    4 tbsp light sour cream


Peel and grate the potatoes and onion into large mixing bowl. Mix in the egg. Combine the dry ingredients together and add to potato mixture.

Divide into four portions and drop onto a heated (medium heat) nonstick skillet lightly coated with cooking spray and cook for 5 minutes or so on each side, until pancakes are cooked through.

Makes four pancakes. Serve with 1 tablespoon light sour cream and 1/4 tablespoon chopped chives.
