A salad bursting with flavor and color. A salad bursting with flavor and color.
Number of Servings: 10


    1 Cup Quinoa
    2 Cups water
    1 Roasted red pepper diced small
    1/2 Yellow pepper diced small
    1 Cup cherry tomatoes cut into quarters
    1/2 Cup shelled edamame
    1/3 Cup chopped kalamata olives
    6 Fresh basil leaves chiffonade


    1/2 Cup red wine vinegar
    1/2 Lemon juiced
    1 tsp Dijon mustard
    2 T. Shallot finely chopped
    2 Cloves of garlic chopped
    S & P
    1/3 Cup extra virgin olive oil


Preheat oven to 400 degrees. Cut red pepper in half and remove seeds. Spray a baking sheet with cooking spray. Place pepper skin side up in oven. Cook for 30 minutes or until skin turns black on the outside. Remove from oven and place in a brown paper bag until it is cooled. Remove from the bag and remove the skin.

While pepper is roasting. Rinse quinoa well. Place quinoa and water in saucepan and heat to a boil on the stove. Reduce to a simmer and let cook for about 20 minutes until tender. Fluff with a fork and let cool. Combine peppers, tomatoes, edamame, olives and basil with cooled quinoa.

Combine dressing ingredients and emulsify. Pour over salad and gently toss.

Optional: Add toasted pine nuts and feta cheese for added flavor.
