    2 1/3 cups Eagle Mills All Purpose Unbleached flour
    2 tsp baking soda
    1/2 tsp salt
    2 tsp ground ginger
    1/2 tsp cinnamon
    1/4 tsp allspice
    1 stick butter
    4 T Smart Balance Omega margarine
    1 cup brown sugar, packed
    1/2 cup molasses (not blackstrap)
    1 large egg


Beat butter and margarine until smooth and creamy. Add brown sugar and molasses, beat for 2 minutes, scraping sides of bowl. Add the egg and beat for 1 minute more. Add dry ingredients to creamed mixture and beat on low just until everything is well blended. Divide in 2 and wrap in plactic wrap, refrigerate for at least 1 hour or up to 4 days.

Preheat oven to 350.
Put some sugar in a small bowl. With a kitchen teaspoon break off chunks and roll between hands to make round balls (36 total), roll each in the sugar then dip a small glass in sugar and press each cookie to about 1/4" thickness.

Bake one sheet at a time for 11-13 minutes. Cookies will spread, if they are touching when you remove them from the oven cut them with a spatula while still hot and remove to a cooling rack.
