    *Zuchini Squash 1 cup(124 g) includes skin, 4 cup (2 zuchini sliced into 1/4 to 3/8 in slices then halve the slices).
    Onions, raw, 1 medium (2-1/2" dia) quartered
    Garlic, 3 cloves minced
    *Tomatoes, red, ripe, raw, year round average, 2 plum tomato (Seeded and Diced)
    V8 Vegetable Juice, Low Sodium, 8 oz
    Olive Oil, 1 tbsp
    Pepper, black, cracked 1 tsp (to taste)
    Salt, 1 tsp
    Italian seasoning 2 tsp
    Crushed red pepper flakes the more the hotter!
    Crushed red pepper flakes (optional)


Makes 6 one cup servings.
Add olive oil,garlic, cracked black pepper and crushed red pepper(optional)cook until the garlic becomes aromatic.(don't burn garlic)
Add onion cook for two minutes stirring ocaisionally.
Add Zuchini italian seasoning and salt to taste. Cook for three minutes.stiring ocasionally
Add diced tomatoes cook another two minutes stiring ocasionally.
Add V-8 and simmer until veggies are the tenderness that you desire.
Serve and top with some low call grated cheese topper (Optional.)
To save time you can buy a can of diced seasoned tomatoes and delete the V-8 and italian seasoning instead of fresh plum tomatoes.
