Ingredients

    6 large eggs
    1 cup of milk non-fat
    1 cup of wilted spinach
    4 oz of mozzarella
    4 oz of cheddar

Directions

Very simple, wilt or cook spinach so that it becomes wilted, typically you can steam spinach.

Now, beat eggs throughly, mix in all ingredients.

Spray a muffin pan with low-fat spray, generously! Pour mixture into each muffin slot, you may fill them near full since they do not raise like muffins do, they do raise a tiny bit though.

Bake at 325 for approximately 45-60 minutes depending on your oven, be careful to not over bake because they will stick or become stubborn! The low temperature is very necessary so they do not over cook quickly and stick to the pan.
