    1 C 2% cottage cheese
    1.5 T nonfat cream cheese
    1 t honey
    1/2 scoop Vanilla Whey Protein Powder
    1/4 t cinnamon
    2 drops of stevia
    1 T nonfat milk
    1/2 t strawberry preserves made with fruit juice
    2 Low Carb HIgh Fiber Tortillas
    4 oz 100% grape juice
    1 T strawberry preserves made with fruit juice
    1 C fresh strawberries, sliced
    1 T cornstarch
    1/4 C water


In a blender add all the ingredients for the filling and blend until smooth. set aside.
In a sauce pan, add fruit juice and preserves and heat to a low boil. Mix cornstarch and water. Add to boiling juice mixture. Add sliced strawberries. Cook on low heat until sauce thickens.
To assemble: add half of filling to a heated up tortilla (I heat up in microwave wrapped in a paper towel for 20 seconds). Place the filling on close to one side and then roll up into a log shape. Then pour half of strawberry sauce over the tortilla roll. Sprinkle with 1 t powdered sugar and serve.
Makes 2 servings.
