Ingredients

    2 lg bk potatoes- skinned , diced
    1/2 c 1% milk or skimmed
    1/3 c eggbeaters or 2 lg eggs
    3 Tbl chopped onion
    4 Tbl bacon bits ( use the low fat one)
    1/3 c wheat flour.


    If potatoes are cold they need to be warmed to mash them. NOT HOT.
    add milk, egg, salt & pepper. Mash & mix well. Add oion & bacon. mix.
    Useing !/2 c measuring cup to pour batter with, spread batter with bottum of cup. Heat griddle to a med temp. Test sm amount of batter to test pan temp. I use a spray for oil in pan. That gives min fat grams.
    cook til golden brown ( about 3 min per side)
    Makes 6
