    8oz cleaned beef tenderloin
    1cup roasted red pepper, chopped
    1 tsp. olive oil
    1oz goat cheese


In oven at broil, roast a red pepper until all is black skin. Place into a paper bag and let sit for 15mins.
Butterfly tenderloin open and take roasted red pepper, chopped small and goat cheese and mix together and fill the tenderloin.
Place1tsp. of olive oil in a oven proof frying pan and let heat on stove top until almost smokes. Place the tenderloin in pan and let get a crust. Mean while, heat oven at 400 degrees. When beef has crust on one side, and oven comes to tempture, place into oven for 15 minutes. Until temp. of meat is at 145 degrees. Take out of oven and let rest for 10 minutes. Slice and serve.
