Introduction

Number of Servings: 4

Ingredients

    4 Tsp Extra Virgin Olive Oil (EVOO)
    4 Large Eggs
    1/4 of a small onion chopped
    1/2 large tomato cut into chunks or diced
    1 cup fresh sliced mushrooms
    1/2 tsp kosher salt
    Sprinkle of black pepper
    1/2 tsp garlic powder

Directions

Cut your veggies up and cook them in the olive oil. When the mushrooms are softer and the onions are clear it is done. Beat your eggs in a bowl and the seasonings. Scramble together in the pan until done. Makes 4 servings if you section it out that way. That is how I figured the nutritional info but if you want to convert it to smaller servings that works well. You can wait to add the tomato until done if you dont like the tomato heated.
