Ingredients

2 tbsp sunflower oil
320g/11oz onions, sliced
320g/11oz deseeded butternut squash, sliced
320g/11oz sugar snap peas
4 tbsp soy sauce
4 tbsp caster sugar
1 red chilli, deseeded and chopped
2 tsp grated fresh root ginger
1 tbsp Thai fish sauce
1 tsp five spice powder
1 tbsp oyster sauce
450g/1lb fillet steak, thinly sliced
320g/11oz pak choi, halved or quartered if large
Handful of basil leaves, torn

Serves 4.
Chop the onions, butternut squash, pak choi and chilli, grate the root ginger, and shred the basil leaves.
Heat the oil in a wok, then stir-fry the onions and squash for 2 minutes. Reduce the heat and cook gently for 3 minutes. Add the sugar snap peas and cook for 3 minutes until just tender. Meanwhile, heat the soy sauce, sugar, chilli, fish sauce, 5-Spice powder and oyster sauce in another wok or a large frying pan, stirring, for about 3 minutes. Add the beef and cook for about 3 minutes. Add the stir-fried vegetables and pak choi and cook for 1 minute until the pak choi is just tender. Add the basil and serve immediately.
